I've cleared everything off my server and re installed again.
It now seems to be working fine!
I do have 1 follow on problem now though, ive added a few test products, and gone through checkout.
Once i get onto the screen where i pull down the shipping method and click continue, it then takes me to a page which says "Select Shipping Method".
On this page its completely blank and thus cannot continue with processing my order.
Any ideas on this?
